A
beautiful story lies behind this famous name. This "cafe" was founded
by a family long established in St Paul. In 1853, during a celebration,
Barthelemy Issert
vowed to ensure the welfare of his family and requested permission to
open a bar,
"Cafe Issert",
which existed until 1900. The man, a wine grower, used travel in a cart
from Nice to Aix-en-Provence in order to sell his wine;
on the way back, he picked up stones, which enabled him to enlarge his
establishement. Renamed the
"Pergola"
in 1922, it became the "Residence"
in 1935:
its highlight at the time was a pianola. The son of Barthelemy Issert,
Marius, dedicated 50 years of his life to St Paul as Mayor of the village
(from 1945 to 1995).
